Cloud Cake (Fluffy Cotton Cheesecake) Recipe
You need (18 cm round pan)
Cream cheese mix

250g cream cheese (soft)

50g butter
-
100ml milk
-
60g flour
-
20g cornstarch (Maizena)
-
6 eggs (separate yolks + whites)
-
90g sugar (split)
-
1 tsp vanilla
-
1 tbsp lemon juice (optional)
-
pinch of salt
For topping
-
Powdered sugar
Step-by-step (Perfect fluffy result)
1) Prep the pan + oven
-
Line the bottom with baking paper

Wrap outside of the pan with foil (so water doesn’t enter)

Put oven on 150°C (top + bottom)

Prepare a water bath (bain-marie): a tray with hot water in the oven
2) Melt the cheese mixture
In a pot on low heat:
-
milk + butter + cream cheese
Mix until smooth and creamy.
Remove from heat, let it cool 2 minutes.
