During winter, we all look for warm, healthy, and filling meals without spending too much. This easy winter soup is perfect for the whole family, made with simple ingredients you probably already have at home.
Ingredients:
1 cup lentils
1 large onion, chopped
1 potato
1 carrot
2 tablespoons oil
1 teaspoon turmeric
1 teaspoon ginger
Salt to taste
Hot water
Fresh parsley & cilantro (optional)
Instructions:
In a pot, heat the oil and sauté the onion until soft
Add the chopped carrot and potato
Add lentils and spices, mix well
Pour hot water and let cook for about 30 minutes
Blend until smooth and creamy
Return to heat for 5 more minutes, then serve
